Crockpot Unstuffed Cabbage Soup

Crockpot Unstuffed Cabbage Soup

Crockpot Unstuffed Cabbage Soup has all the delicious flavor of stuffed cabbage with none of the mess! This dish is so simple to throw in the slow cooker and it is the perfect all day recipe. This soup was so good it is now on our regular rotation!

  • This soup makes a lot, so I would recommend at least using a 5 quart slow cooker or bigger.
  • This is a great all day recipe for those that need longer cooking times. If you are short on time pop it over to HIGH and cook for 5 hours.
  • This is a great way to use our Make Ahead Ground Beef and make this a dump and go recipe.

The cook (Mikey Goode) is a good cook and is funny. He is also trying to get over a cold in this video, so it is even more amusing. Just watch!

Ingredients

  • 5 cups beef broth
  • ½ head cabbaged, chopped
  • 1 lb ground beef (We used our Make Ahead Ground Beef)
  • ½ lb ground breakfast sausage
  • 1 onion, chopped
  • 28 oz can crushed tomatoes
  • ½ cup quick cooking barley
  • 2 cloves garlic, minced
  • 2 teaspoons sugar
  • 1 teaspoon pepper
  • ¼ teaspoon hot sauce (I like at least 1 tbsp and I use Frank’s)

Directions

  1. Put your cabbage in your crock pot (5 quart or larger) and set off to the side.
  2. In a large skillet over medium heat, brown your meat with your onion, drain and put back in your skillet.
  3. Pour your broth, tomatoes (undrained) and the rest of your ingredients in your skillet.
  4. Combine well and use a spoon to ladle over your cabbage in your crock pot.
  5. Cover and cook on low for 8-9 hours (give it a good stir before serving).
