Crockpot Smoked Turkey Bean Soup

Crockpot Smoked Turkey Bean Soup – Smoked turkey is a great substitute for ham. This is a smoked turkey version of ham and bean soup. Good smoky flavor with the same texture. Can’t tell the difference. Enjoy.

I wondered a little about using smoked turkey in a bean soup before fixing this recipe. However, it turned out great. This is an easy recipe to follow and Crockpot easy to make.

Crockpot Smoked Turkey Bean Soup

Ingredients

  • 1 1/2-2 pounds smoked turkey – I am using a thigh
  • 1 large diced onion
  • 1 cup diced celery
  • 2 – 40.5oz cans of northern beans
  • 1 tbsp tomato paste
  • 1 tbsp parsley
  • salt and pepper to taste

Directions

  1. Take off as much of the fat from turkey as you can and rinse well under water.
  2. Place turkey in slow cooker and add onion, celery, beans and water (enough to cover the turkey and beans).
  3. Cook on high for 4-5 hours or on low for 8 hours.
  4. Remove smoked turkey and chop or shred and add back into soup.
  5. Great substitute for ham hocks.
  6. This is a mock of ham and bean soup.
  7. If you like a thicker consistency then add a 1 tbsp flour/water slurry in the beginning.
  8. Enjoy.
