Crockpot Sausage Lentil Stew

I was a little hesitant when I first found this Crockpot Sausage Lentil Stew recipe because I am always leery when the dish is full of all different colors. I know that sounds weird, but I have found that the dish usually just doesn’t have enough flavor for my tastes, but boy was I wrong with this recipe. Healthy, tasty and easy to fix in the Crockpot. I think you too will be pleasantly surprised with this Crockpot Sausage Lentil Stew.

This was inspired by a stew I had at Carrabba’s Italian restaurant.  I just lightened it up with  turkey sausage and made it in the Slow Cooker.  It’s also Gluten Free!!

Crockpot Sausage Lentil Stew


  • 1 lb Turkey Sausage
  • 2 Carrots, chopped
  • 2 Celery Stalks, chopped
  • 1 Onion, chopped
  • 2 Garlic Cloves, minced
  • 1 Can Diced tomatoes
  • 1 1/2 Cups Dried Lentils
  • 1 Quart Chicken Stock
  • 2 Cups Water
  • 1 tsp Italian Seasoning
  • 3/4 tsp Thyme
  • 3/4 tsp Salt
  • 1/2 tsp Pepper
  • 2 Cups fresh Spinach
  • Optional: Fresh Parmesan Cheese


  1. Brown sausage until cooked completely.
  2. Place all ingredients except Spinach in Crockpot.
  3. Cook on high 3-4 hours, low 6-7 hours.
  4. Before serving, put spinach in crock pot and stir until wilted.
  5. Serve stew with bread and fresh Parmesan cheese
