Crockpot Rice Pilaf

Crockpot Rice Pilaf – Turn your slow cooker into a rice cooker with this flavorful and zesty Wild Rice Pilaf. With plump golden raisins, orange juice and zest, and creamy butter, this is the perfect side dish for any fall feast.

When you want a good side dish, and you are tired of plain ol’ mashed potatoes, try this very good Crockpot Rice Pilaf. As far as the ingredients, there are no exotic ingredients – just stuff you can get at any grocery store. Cooking rice in the Crockpot is pretty cool too!

Ingredients

  • 1 ½ cups wild rice, uncooked
  • 3 cups low-sodium, non-fat chicken stock
  • 3 Tbsp. orange zest
  • 2 Tbsp. orange juice
  • ½ cup raisins (I like golden raisins)
  • 1 ½ tsp. curry powder
  • 1 tsp. butter, softened
  • ½ cup fresh parsley
  • 2 Tbsp. chopped pecans
  • ½ cup chopped green onion

Directions

  1. Mix rice, chicken stock, orange zest, orange juice, raisins, curry powder, and butter in Crockpot.
  2. Cover and cook on HIGH 2 ½-3 hours, or until rice is tender and has absorbed most of the liquid, but is not dry.
  3. Stir in parsley, pecans, and green onion just before serving.
  4. Enjoy!
