Crockpot Onion-Jalapeno Cornbread

Crockpot Onion-Jalapeno Cornbread – Look to your slow cooker when you’re struggling for tonight’s side dish. Our Crockpot Onion-Jalapeno Cornbread is an incredibly easy addition to the menu. If you have green onions and jalapenos you won’t even need a trip to the grocery store.

Crockpot Onion-Jalapeno Cornbread

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup finely chopped onion
  • 1/4 cup thinly sliced green onions (2)
  • 1 fresh jalapeno peppers, seeded and finely chopped*

*Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.

Directions

  1. Lightly coat a 4-quart Crockpot with cooking spray.
  2. In a medium bowl stir together cornmeal, flour, sugar, baking powder, and salt; set aside.
  3. In a medium bowl whisk together milk, eggs, oil, onion, green onions, and jalapeno peppers.
  4. Add egg mixture all at once to cornmeal mixture.
  5. Stir just until combined (mixture should still be slightly lumpy).
  6. Spoon batter into prepared Crockpot.
  7. Cover and cook on high-heat setting for 2 to 2-1/2 hours or until a toothpick inserted near the center comes out clean.
  8. Carefully remove Crockpot lid so condensation from lid does not drip on to bread.
  9. Cook for 5 to 10 minutes more to evaporate excess moisture.
  10. Turn off Crockpot.
  11. Cover opening of Crockpot completely with paper towels.
  12. Place lid on top.
  13. Cool for 10 to 15 minutes.
  14. Run a knife around edges of Crockpot.
  15. Remove bread from Crockpot.
  16. Cool completely on a wire rack.
