Crockpot Mexican Casserole – Hi there ~ I am happy to share my Crockpot Mexican Casserole with you today. I usually make this dish in the oven but decided to try it in the Crockpot. It is delicious just as well.

This casserole is an easy and delicious dish that doesn’t have tons of ingredients, but still tastes great. Fixing it in the Crockpot makes this dish even easier and the taste is great. Your family will love this and you will be fixing it more and more after they taste it.

Ingredients

  • 1 1/2 lbs. ground beef
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 1 can enchilada sauce
  • 1 can ranch style beans
  • 1 can Rotel tomatoes
  • Flour tortillas
  • Shredded cheese

Directions

  1. Brown ground beef with onions and garlic.
  2. Mix cooked beef with enchilada sauce in bowl until mixed.
  3. Line Crockpot with slow cooker liner or spray with non-stick spray.
  4. Spoon a couple of tablespoons of meat/sauce mixture on bottom of crockpot.
  5. Tear flour tortillas and layer on bottom (about 3 med. size).
  6. Layer meat mixture, half can ranch style beans, half can Rotel tomatoes and cheese.
  7. Layer more torn pieces of flour tortillas, rest of meat mixture, beans and Rotel tomatoes.
  8. Add a few additional torn pieces of flour tortillas and top with shredded cheese.
  9. Cook on low for 3-4 hours or until cheese is melted well.
  10. Enjoy!
