Crockpot Indonesian Beef Rendang

Crockpot Indonesian Beef Rendang – With a decent bit of beef and plenty of time in the slow-cooker you will absolutely love this incredible dish… spicy, aromatic and fresh! But don’t take our word for it, go make it yourself!!

You may have to hunt around for some of these ingredients, but believe me it is going to be well worth it. You can always find these items on the internet. Be careful with how much red chilies you use as this dish is very spicy and you may want to use less.

Crockpot Indonesian Beef Rendang

Ingredients

Paste

  • 2 red onion
  • 1 chunk of root ginger
  • 4 cloves of garlic
  • 2 red chilies (Less if you don’t want it so spicy.)
  • 2 sticks of lemongrass
  • 6 kaffir lime leaves
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tbsp palm sugar
  • 1 tsp salt
  • 1 tsp ground turmeric

Curry

  • 1 oz of groundnut oil
  • 2 lb (1 kg) beef shin, cubed (I used 2 lbs top round)
  • 16 oz (400 ml) full fat coconut milk
  • 3 1/2 oz (100 g) desiccated coconut
  • 1 cinnamon stick
  • 1 tbsp salt

Serving

  • 1 tbsp tamarind paste
  • 1 bunch of fresh coriander
  • 2 spring onions (optional garnish)
  • 1 lb (400 g) Thai Fragrant Rice

Directions

  1. Cut the beef into bite-sized pieces and flash fry in batches in a clean pan with the groundnut oil to get a bit of golden color.
  2. Transfer the beef to a slow cooker once it’s colored to make space to brown more.
  3. Peel and roughly chop the onion, garlic, ginger, lemongrass and chillies.
  4. Throw them all into the food processor with the kaffir lime leaves, spices and palm sugar.
  5. Blitz to a paste and start to fry in the beef pan with a little more groundnut oil for 2-3 minutes.
  6. Scrape the paste into the slow-cooker and add the coconut milk, desiccated coconut, cinnamon stick, salt and about 3 1/2 oz (100ml) of water.
  7. Cook on a LOW heat for 6 hours until the beef is really tender.
  8. Add in tamarind and stir.
  9. Serve with steamed rice and some freshly finely sliced spring onion and red chilli slices and coriander. (This is a spicy dish so you may want to adjust the amount of chilies downward to save your taste buds.)
