Crockpot Greek Chicken Gyros – Easy to make chicken gyros that only take minutes to throw into the slow cooker!  They are light and delicious and packed with amazing Greek flavor!

Because I love Greek gyros so much I made this batch all for myself to have on hand to eat throughout the week.  The chicken is just so tender and melts in your mouth.  All of the Greek seasonings combine to bring you an amazing full of flavor meal.  It is so good served on warm Greek pita bread loaded with delicious veggies. But the best part of a gyro is the tzatziki sauce…  am I right??  The creamy and delicious sauce with the fresh shredded cucumber inside is AMAZING!  It is made with healthy ingredients like Greek yogurt too.  So you can enjoy this amazing and delicious gyro without feeling guilty about it. You will love it!

Crockpot Greek Chicken Gyros

Crockpot Greek Chicken Gyros

Ingredients

  • 2 lb boneless skinless chicken breast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano leaves
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Juice of ½ medium lemon
  • ⅓ cup water

Tzatziki Sauce:

  • 2 cups plain greek yogurt
  • 1 cucumber, finely grated
  • 2 to 3 cloves garlic, minced
  • 1 tablespoon white wine vinegar
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried oregano leaves
  • Salt and pepper, to taste
  • Juice of ½ medium lemon
  • 1 tablespoon extra-virgin olive oil

Options for serving:

  • warm pita bread
  • red onion
  • red pepper
  • romaine lettuce
  • cucumber, diced
  • sliced tomatoes

Directions

  1. Spray a slow cooker with cooking spray.
  2. Add the chicken to the slow cooker.
  3. In a small bowl combine onion, garlic, oregano, salt, pepper, olive oil, red wine vinegar, lemon juice, and water.
  4. Pour over chicken.
  5. Cook on LOW for 6-8 hours or HIGH for 4-6.
  6. To make the sauce: In a medium bowl combine Greek yogurt, cucumber, garlic, white wine vinegar, dried dill week, dried oregano.
  7. Salt and pepper to taste and add lemon juice and drizzle olive oil on top.
  8. Refrigerate for 30 minutes to let the flavors blend.
  9. Prepare chicken on warm Greek pita bread with desired veggies and sauce on top.
  10. Enjoy!
