Crockpot Easy Mexican Lasagna

Crockpot Easy Mexican Lasagna is a delight dish and the family will certainly love it. So simple to make and, of course, Crockpot easy to make. I’m pretty sure lasagna is not Mexican, but who cares. With a lot of traditional Mexican ingredients in the recipe, this almost qualifies as a true Mexican dish and it is really good. If you give this a try, I am sure you will agree with me and add this to you recipe box.

Crockpot Easy Mexican Lasagna

Ingredients

  • 1 lb ground beef
  • 1 cup onions
  • 8 corn or flour tortillas (you might need more or less depending on the size and shape of your slow cooker)
  • 1 can black beans, drained
  • 1-1 ½ cups shredded cheddar cheese
  • 1-1 ½ cups shredded pepper jack cheese
  • 1 can fire roasted tomatoes and green chilies
  • 1 packet of taco seasoning or ¼ cup of homemade taco seasoning (Click here for recipe)
  • Sour cream, if desired

Directions

  1. Brown ground beef and onion.
  2. Drain grease.
  3. Add taco seasoning, tomatoes with green chilies and black beans and mix together.
  4. Spray slow cooker with cooking spray or olive oil.
  5. Add 1/3 of ground beef mixture to slow cooker.
  6. Lay tortillas on top.
  7. If needed, tear off pieces of tortilla and use it to fill in any spaces.
  8. You’ll want the tortillas to come all the way to the edge and the ground beef mixture to be covered.
  9. Next, add 1/3 of each of the cheeses.
  10. Repeat layers twice more.
  11. End with ground beef mixture and cheese.
  12. Cover and cook on LOW for 3-4 hours.
  13. Cut into 8 wedges.
  14. Top each wedge with sour cream, if desired.
