Crockpot Easy Breakfast Casserole – If you are like me, you don’t like getting up early in the morning and fixing a big breakfast for the family. Well, this is the answer to all of our problems. Easy to fix and great to eat. And, you don’t have to get up early to fix it.

Note: The video is a little distorted as you can tell, but this is a regular size crockpot.

Crockpot Easy Breakfast Casserole

Ingredients

  • 2 lb bag of frozen hash browns
  • 1 lb breakfast sausage (browned)
  • 1 medium sized onion (chopped)
  • 2-3 cups Shredded Cheese (or more)
  • 12 Large Eggs (Beaten)
  • 1/4 Cup Milk
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Ground Mustard
  • 1/4 tsp Garlic Powder
  • Plus extra Salt and Pepper for layers

Directions

  1. Brown Sausage and drain. Set aside
  2. Dice onion. Set aside.
  3. Beat eggs, and add mustard, garlic, salt, pepper, and milk.
  4. Spray inside of slow cooker with non-stick cooking spray.
  5. Layer starting with hash browns, followed by onions, then sausage, then cheese. Season layers with additional Salt and Pepper. Repeat layers three times.
  6. After all layers are finished, pour egg mixture over top of layers.
  7. Set your slow cooker to LOW, and let it go for 6 hours.
  8. Test casserole to make sure it is done. Stick a knife or a fork into it and see if it comes out clean.
