Crockpot Creole Chicken

Crockpot Creole Chicken – If you like Creole or Cajun cooking as much as I do, then you have got to try this recipe. I found the Slap Ya Mama Cajun seasoning at Wal-Mart and it is also available on Amazon if you can’t find it in your local area. I think that the hardest part of fixing this dish is smelling it while it is cooking and NOT trying to get at it too early because it smalls so good. I did use chicken breasts (cut into around 4″ pieces instead of thighs). I just prefer the lower fat of the breasts but I am absolutely sure that the thighs would be delicious. I also left out the bell peppers because I have never liked them. Weird, I know, but what can I do.

Ingredients

  • 3-4 pounds of chicken thighs (I used chicken breasts)
  • 1 tsp Kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 (8 ounce) can of tomato sauce
  • 1 cup of classic Coca-Cola
  • 1 Tbsp Zatarains Creole seasoning
  • 1 tsp Slap Ya Mama Cajun seasoning
  • 1 tsp of dried basil
  • 1/2 tsp of garlic powder
  • 1 cup of chopped onion
  • 1/2 cup of coarsely chopped green bell pepper
  • 1/4 cup of chopped celery
  • 1/2 cup of sliced mushrooms, optional
  • Fettuccine pasta, cooked al dente

Directions

  1. Remove skin from chicken to reduce excess fat if desired.
  2. Season the chicken on both sides generously with salt and pepper.
  3. Place into a 6 quart slow cooker.
  4. Whisk together the tomato sauce, Coke, Zatarains Creole seasoning, Slap Ya Mama Cajun seasoning, basil and garlic powder.
  5. Add the onion, bell pepper and celery and whisk.
  6. Pour over the chicken.
  7. Cover and cook on LOW for about 6 hours.
  8. Add fresh, sliced mushrooms if desired, in last 10 minutes of cooking.
  9. Skim off any excess fat from the top.
  10. Spoon some of the sauce onto the cooked and drained pasta to coat.
  11. Serve the chicken alongside the noodles.
  12. Add more salt and pepper if needed…it gets better if eaten the next day.
