Crockpot Chicken Chipotle Enchilada Casserole

Crockpot Chicken Chipotle Enchilada Casserole – It’s time to get out the slow-cooker and create a zippy, zesty Chicken Enchilada Casserole your whole family will love.

I love just about about all Mexican style foods. This is definitely near the top of my list. Great ingredients along with easy Crockpot cooking are 2 great reasons to put this on your list.

Crockpot Chicken Chipotle Enchilada Casserole

Ingredients

  • 2 Packages Old El Paso Chipotle Cooking Sauce (2 cups)
  • 1 can Old El Paso Refried Beans (16 oz)
  • 1 lb. cooked shredded chicken (I prefer white meat)
  • 14 corn tortillas
  • 8 oz. shredded jalapeno jack cheese
  • 1/2 cup diced onions
  • 1/2 cup diced red bell pepper
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp olive oil
  • salt and pepper to taste

Directions

  1. Heat olive oil in a saute pan over medium heat.
  2. Add onion, red bell pepper and jalapeno to heated pan and cook until tender and slightly caramelized.
  3. Reduce the heat and add shredded chicken to vegetables and deglaze pan with 1 – 2 tbsp water, if needed.
  4. Squeeze in 2 packages of Old El Paso Chipotle Cooking Sauce and stir to combine.
  5. Remove from heat.
  6. Toast corn tortillas under the broiler, or on the stove top, for a few minutes on each side until golden (optional).
  7. In a Crockpot, evenly layer ingredients in the following order: chipotle chicken mixture, toasted tortillas, refried beans, chipotle chicken mixture, shredded cheese; ending with a layer of shredded cheese on top.
  8. For a six quart Crockpot, you should be able to make about 3 layers.
  9. Put lid on and cook on HIGH for 1 hour or on LOW for 2 hours.
  10. Serve piping hot with sour cream and guacamole, additional salsa if desired, and a crisp green salad on the side.
