Crockpot Cheese Tortellini Sausage Soup

Crockpot Cheese Tortellini Sausage Soup – If you are looking for an excellent soup this would be it. I just made this for one of my clients and her whole family could not leave the slow cooker alone. It makes the whole house smell wonderful. Recommend this to anyone who works all day and would like to come home to a hot meal. I would add the tortellini the last two hours though. They do become a little soggy but still it was great.

Crockpot Cheese Tortellini Sausage Soup

Ingredients

  • 19 oz. bag frozen cheese tortellini
  • 1 lb sausage (I prefer mild Italian)
  • 1 bag fresh spinach (optional in my house)
  • 2 15 oz cansĀ Italian style diced tomatoes
  • 2 14.5 ozĀ cans low-fat chicken broth
  • 8 oz cream cheese, cut into cubes

Directions

  1. Brown the sausage in a skillet on the stove top until cooked and crumbled.
  2. Drain.
  3. Add the sausage and remaining ingredients to a 6-quart slow cooker.
  4. Stir to combine.
  5. Cook in the slow cooker, on LOW for 5 hours, stirring twice during cooking.

NOTE

I thought the tortellini was a little over cooked, so I now put the tortellini into the Crockpot with a couple of hours remaining in the cooking time. They came out really well and not so soggy.
