Crockpot Beer Braised Pork Chops

Crockpot Beer Braised Pork Chops – Pork chops are a classic dinnertime staple—but they take quite a while to make. Save time and make unbelievably flavorful chops with this set-it-and-forget-it meal.  The best pork chops are bone in – cooked until just tender and brown to enhance flavor. Now in restaurants, a chef will use a delicate balance between stove top and oven for their pork chops, but today I’m going to show you how to make moist, delicious and flavorful chops in your slow cooker. We use 12 ounces of beer in this recipe and that’s plenty of liquid here. Now during the slow cooking process, all of that steam will build up under the lid making these pork chops super moist.

Crockpot Beer Braised Pork Chops

Ingredients

  • 1/4 cup oil
  • 6 (8-oz) bone-in pork chops
  • 4 cups sliced onions
  • 2 cloves garlic, thinly sliced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary leaves
  • 1 (12-oz) bottle of beer
  • Zest and juice of 1 lemon
  • 2 Tbsp whole grain mustard
  • 1/2 cup chicken stock
  • 2 Tbsp flour
  • 1 tsp salt, plus more for seasoning pork chops
  • 1/2 tsp black pepper, plus more for seasoning pork chops

Directions

  1. Heat the oil in a large skillet on medium-high heat.
  2. Brown the pork chops and place them in the slow cooker.
  3. Add the onion and garlic to the skillet and sauté until the onions begin to soften, about 5 minutes.
  4. Turn off the heat and add the thyme, rosemary, beer, lemon zest, lemon juice, mustard, salt, and pepper to the pan.
  5. Stir together the chicken stock and flour in a measuring cup until there are no lumps.
  6. Stir the chicken stock mixture into the pan with the onions.
  7. Pour the contents of the pan over the pork chops.
  8. Put the lid on the slow cooker and cook on HIGH for 3 hours.
  9. Enjoy!
